- Add the diced onion, minced garlic, drained cannellini beans, crushed tomatoes, chicken broth, olive oil, Italian seasoning, red pepper flakes, salt, and black pepper to the slow cooker. Stir everything together so it is evenly combined.
- Put the lid on and cook on LOW for 6 to 7 hours or on HIGH for 3 to 3 1/2 hours. The beans should be very soft and the broth will look deep red and fragrant when it is ready.
- Use a spoon or potato masher to lightly crush about a quarter of the beans against the side of the pot. This thickens the broth naturally without any flour or starch.
- Add the peeled shrimp to the slow cooker in a single layer as much as possible. Put the lid back on and cook on LOW for 20 to 30 minutes. The shrimp are done when they are pink and opaque all the way through. Do not cook them longer than 30 minutes or they will get tough.
- Taste the broth and adjust with a pinch more salt or red pepper flakes if needed. Ladle the stew into bowls, scatter fresh parsley over the top, and serve with crusty bread on the side.
Notes
Freeze the bean and tomato base without the shrimp for the best results. Add fresh shrimp when you reheat so they stay tender.
