Whole Wheat Pumpkin Cream Cheese Muffins

A wholesome everyday pumpkin muffin made with a 50-50 blend of white whole wheat and all-purpose flour, filled with a simple tangy cream cheese swirl. The texture is tender and satisfying, with just enough whole grain flavor to make these feel more substantial.

Ingredients
  

  • 8 oz cream cheese full-fat, softened to room temperature
  • 1/4 cup powdered sugar sifted, for the cream cheese filling
  • 1 tsp vanilla extract for the cream cheese filling
  • 7/8 cup all-purpose flour spooned and leveled (that is 3/4 cup plus 2 tablespoons)
  • 7/8 cup white whole wheat flour spooned and leveled (same measure as all-purpose)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1/2 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs room temperature
  • 1/3 cup whole milk or low-fat milk

Method
 

  1. Preheat your oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners and set it aside.
  2. Make the cream cheese filling. Beat softened cream cheese with a hand mixer on medium speed for about 1 minute until it is smooth with no lumps. Add the powdered sugar and vanilla extract and beat until fully combined. Set the bowl aside at room temperature.
  3. In a large mixing bowl, whisk together the all-purpose flour, white whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until everything is evenly distributed through the dry mixture.
  4. In a separate bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and milk until smooth. Take a moment to make sure the brown sugar is fully broken up with no lumps.
  5. Pour the wet pumpkin mixture into the bowl of dry ingredients. Using a rubber spatula, fold everything together with slow, deliberate strokes until the batter just comes together. Stop as soon as you no longer see dry streaks. Overmixing is the main reason whole wheat muffins turn dense.
  6. Divide the batter evenly among the 12 lined muffin cups, filling each about two-thirds full. Spoon about 1 tablespoon of cream cheese filling onto the center of each cup.
  7. Use a toothpick to swirl the cream cheese gently into the top of each muffin. Pull the toothpick through 2 or 3 figure-eight motions so the filling is partially incorporated but still visible as a swirl.
  8. Bake for 21 to 24 minutes. Check doneness by inserting a toothpick into the pumpkin batter portion of the muffin, not directly into the cream cheese swirl. The toothpick should come out with a few moist crumbs and no wet batter. The tops should feel set when lightly pressed.
  9. Cool in the pan for 5 minutes, then move the muffins to a wire rack to finish cooling. The whole wheat flavor mellows as they cool. Refrigerate leftovers because of the cream cheese filling.

Notes

Do not be tempted to use more than half whole wheat flour. The 50-50 blend is the tested sweet spot for this recipe. If you only have regular whole wheat flour on hand, use one-third of the total flour as whole wheat and two-thirds as all-purpose flour to avoid a heavy result.
