- Wash and dry the cucumber well. English cucumbers have a thin edible skin so there is no need to peel it, which also helps the rounds hold their shape when you pick them up.
- Slice the cucumber into rounds about 1/3 to 1/2 inch thick. Thinner than that and they bend; thicker and they are harder for small kids to bite through cleanly. You should get about 20 to 24 rounds from one large English cucumber.
- Arrange the rounds in a single layer on a plate or inside a snack container with a flat bottom. Make sure they are not overlapping so you have a stable surface to top them.
- Spoon a small amount of hummus, about 1/2 teaspoon to 1 teaspoon, onto the center of each round. Do not overfill or the hummus slides off when kids pick them up. A small spoon or a butter knife works well for this.
- Sprinkle everything bagel seasoning lightly over each round. A little goes a long way since the seasoning has salt in it already. If you are making these for younger kids, go light on the seasoning and let them add more at the table.
- Serve right away for the best texture. If packing for school, keep the hummus in a separate small container and let kids dip the plain cucumber rounds. This keeps everything from getting slippery in the bag.
