Method
- Toast the bread until it is golden brown and firm all the way through, not just on the surface. It should feel crisp when you press the center lightly. Soft toast will go limp under the ricotta, so give it that extra minute if your toaster runs light.
- While the bread toasts, hull and thinly slice the strawberries. Aim for slices about an eighth of an inch thick so they lay flat without sliding off.
- Let the toast cool for about 30 seconds so the ricotta does not melt when it hits the warm surface. Spread a generous layer of ricotta on each slice, going all the way to the edges. Use about 2 to 3 tablespoons per slice.
- Arrange the strawberry slices on top of the ricotta, overlapping them slightly or laying them in a single layer, whichever feels easier. Cover the toast so every bite has some fruit.
- Drizzle honey evenly over both pieces, then sprinkle the lemon zest on top. Add a small pinch of flaky salt if you are using it. The salt brings out the sweetness of the strawberries noticeably.
- Use a sharp knife to cut each slice into four equal quarters. Serve immediately for the best texture, or pack the components separately for a lunchbox.
Notes
For lunchbox packing, keep the ricotta in a small container and the strawberries in a separate zip bag. Assemble at school or let kids do it themselves. Assembled bites do not travel well for more than about 30 minutes before the toast softens.
