Oatmeal Raisin Snack Bars

These no-bake oatmeal raisin snack bars come together in about ten minutes, then chill until firm and sliceable. They are chewy, lightly sweet, and sturdy enough to pack in a lunchbox without falling apart.

Ingredients
  

  • 2 1/2 cups old-fashioned rolled oats not quick oats
  • 1/2 cup creamy peanut butter stir well before measuring
  • 1/3 cup honey
  • 3/4 cup raisins
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1 tsp pure vanilla extract

  • 8x8 inch baking pan
  • parchment paper
  • large mixing bowl
  • microwave-safe bowl or small saucepan
  • rubber spatula

Method
 

  1. Line your 8x8 inch pan with parchment paper, letting the edges hang over the sides so you can lift the bars out later. Set it aside.
  2. Combine the peanut butter and honey in a microwave-safe bowl. Microwave for 30 seconds, stir well, then microwave another 15 seconds if needed. You want the mixture to be loose and pourable, not thick and clumpy. Alternatively, warm them together in a small saucepan over low heat, stirring until smooth.
  3. Pour the warm peanut butter and honey mixture into a large mixing bowl. Stir in the vanilla extract, cinnamon, and salt until combined.
  4. Add the rolled oats and raisins to the bowl. Stir everything together with a rubber spatula until all the oats are evenly coated and the raisins are distributed throughout. The mixture will be thick and sticky, which is exactly right.
  5. Transfer the mixture into your lined pan. Press it down firmly and evenly using the back of the spatula or your clean hands. Press hard into the corners and edges so the bars hold their shape when sliced. The more firmly you pack them, the better they hold together.
  6. Refrigerate for at least one hour, or overnight for best results. When the bars feel firm to the touch, lift them out of the pan using the parchment overhang and place on a cutting board.
  7. Slice into 12 bars using a sharp knife. Cut straight down rather than sawing back and forth to keep the edges clean. Serve cold or at room temperature.

Notes

Keep bars in the fridge for best texture. They soften at room temperature after about 30 minutes, so pack them cold for lunchboxes and they will be at a good eating texture by snack time.
