Air fryer shrimp tacos have become my go-to on nights when I’ve already mentally checked out of cooking but still need to feed five people a real dinner. The shrimp take 5 to 6 minutes at 400 degrees, and if you start the lime slaw while the air fryer preheats, everything lands on the table at the same time.

The active work here is maybe 10 minutes: patting the shrimp dry, tossing them in seasoning, shredding cabbage and mixing the slaw. That’s it. The rest is just waiting for the air fryer to do its thing, then warming tortillas and setting out toppings.

The cumin and chili powder give the shrimp enough flavor that they don’t need a complicated sauce. A good squeeze of lime over the top before you eat is really all they need.

How this ended up in the regular rotation

I first made these on a Thursday when I had a pound and a half of shrimp in the fridge that needed to be used and absolutely no plan. I figured I could season them and throw them in the air fryer while I figured out the rest. By the time the shrimp were done, I had half a head of cabbage shredded and tossed with lime juice and mayo, and we were eating tacos in under 20 minutes. My pickiest kid asked for seconds, which almost never happens with anything involving cabbage.

I’ve made them probably a dozen times since. I usually double the slaw because the leftovers are good on a rice bowl the next day, even after the cabbage softens overnight.

Why you will love this

  • The shrimp are fully cooked in 5 to 6 minutes, which makes this one of the fastest proteins you can run through an air fryer.
  • The lime slaw is genuinely good, not just a filler. The mayo and fresh lime juice balance each other out and the cabbage stays a little crisp if you dress it right before serving.
  • No standing over a hot pan. The air fryer handles the cooking while you prep toppings and warm tortillas.
  • The seasoning blend (cumin, chili powder, smoked paprika) is simple but works. You probably already have everything in your spice cabinet.
  • Corn or flour tortillas both work, so you can use whatever your family prefers or whatever you have on hand.

Tips for success

  • Pat the shrimp very dry before seasoning. This is the step most people skip, and it’s the reason shrimp steam instead of getting any color. Wet shrimp in a hot air fryer just turns rubbery.
  • Watch the curl, not the clock. Shrimp are done when they form a loose C shape. A tight O means they’ve gone too far and you can’t undo that.
  • Don’t overlap the shrimp in the basket. Close together is fine, stacked is not. Overlapping means uneven cooking and some shrimp will be underdone while others are overdone.
  • Dress the slaw right before you eat, not an hour ahead. The lime juice will start pulling moisture out of the cabbage within 20 to 30 minutes, and the slaw gets watery fast.

Common questions about this recipe

  • Can I use frozen shrimp? Yes. Thaw them completely in cold water, then pat them very dry. Frozen shrimp that aren’t fully thawed will release water in the air fryer and won’t brown properly.
  • What size shrimp works best? Large shrimp (21 to 25 count) hold up well in the air fryer and are big enough to feel substantial in a taco. Smaller shrimp cook faster and can overcook before you realize it.
  • Can I make this without an air fryer? A hot skillet works. Cook the seasoned shrimp over medium-high heat for about 2 minutes per side until pink and just opaque.
  • My slaw tastes flat. What happened? It probably needs more lime juice or a pinch more salt. Taste it after you mix it and adjust before you serve.

Substitutions

If someone at the table doesn’t eat shrimp, chicken tenders cut into strips and seasoned the same way work well. They’ll need a few extra minutes in the air fryer, around 10 to 12 minutes at 400 degrees, depending on thickness. For the slaw, plain Greek yogurt thinned with a little extra lime juice is a reasonable swap for mayo if that’s what you have or prefer.

Flour tortillas are softer and easier for younger kids to hold together. Corn tortillas have more flavor but can crack if they aren’t warmed properly. Lettuce cups also work if you want to skip the tortillas entirely. For cilantro haters, just leave it out. The slaw is still good without it.

Make-ahead and storage

You can mix the dry taco seasoning up to a week ahead and store it in a small jar. The cabbage can be shredded and kept in a covered bowl in the fridge for up to 2 days, but don’t add the lime dressing until right before you serve or it will go soggy. If you’re prepping for a busy night, having both of those ready cuts the actual work down to just cooking the shrimp.

Leftover shrimp and slaw should be stored separately in the fridge and used within 2 days. To reheat the shrimp, put them back in the air fryer at 350 degrees for 2 to 3 minutes and check them early. They go rubbery quickly when reheated too long. The slaw softens in the fridge overnight but still tastes good on a rice bowl or alongside eggs the next morning. I wouldn’t try freezing the cooked shrimp or the slaw. The texture on both doesn’t survive it.

Ingredients

  • 1 1/2 lbs large shrimp peeled and deveined, fresh or thawed from frozen, patted very dry
  • 1 tbsp olive oil
  • 1 tsp cumin ground
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 cups green cabbage shredded thin, about half a small head
  • 3 tbsp mayonnaise
  • 2 tbsp fresh lime juice from 1 large lime, plus lime wedges for serving
  • 1/4 tsp kosher salt for the slaw
  • 2 tbsp fresh cilantro chopped, plus more for serving
  • 8 small corn or flour tortillas warmed
  • 1 medium avocado sliced, optional
  • hot sauce hot sauce for serving, optional

Equipment

  • air fryer
  • large mixing bowl
  • small bowl
  • tongs

Method

  1. Make sure your shrimp are thawed completely if using frozen, then pat them very dry with paper towels. Any extra moisture on the surface will steam instead of giving you that light caramelized char. Add the shrimp to a large bowl.
  2. Drizzle the olive oil over the shrimp, then sprinkle on the cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Toss well until every shrimp is evenly coated in the seasoning.
  3. Preheat your air fryer to 400 degrees F for 3 minutes. Arrange the shrimp in a single layer in the basket. They can be close but should not overlap. Air fry for 5 to 6 minutes, flipping or shaking the basket once at the 3 minute mark. Pull them the moment they are pink, opaque, and just slightly curled into a loose C shape. A tight curl means they are overdone.
  4. While the shrimp cook, make the lime slaw. Combine the shredded cabbage, mayonnaise, lime juice, salt, and cilantro in a bowl. Toss well and taste. Add a little more lime juice or salt if it needs it. The slaw should taste bright and a little tangy. Set aside.
  5. Warm the tortillas directly over a gas flame for about 20 seconds per side, or wrap them in a damp paper towel and microwave for 30 to 45 seconds until pliable and steamy.
  6. Assemble the tacos. Lay a spoonful of slaw in each tortilla, add 3 or 4 shrimp on top, then finish with avocado slices, extra cilantro, a squeeze of lime, and hot sauce if you like. Serve immediately while the shrimp are still warm.

Notes

Do not walk away from shrimp in a hot air fryer. They go from perfectly cooked to rubbery in under a minute. Use the 5 minute mark as your check-in point and pull them as soon as they look done. Leftovers keep 2 days in the fridge but are best eaten fresh.
