These air fryer stuffed mini peppers with ground turkey have become one of my most-repeated weeknight dinners, mostly because the active work is only about 15 minutes. You brown the turkey, mix in cream cheese and cheddar, fill the peppers, and the air fryer does the rest. Twenty-four little pepper halves fit in two batches and feed four people without anyone fighting over portions.

The filling is the part that surprised me the first time I made these. Cream cheese sounds heavy, but once it’s mixed with the cooked turkey and sharp cheddar and cooked at 375 degrees F for 12 to 14 minutes, it gets bubbly and almost fluffy rather than dense. My one early mistake was mixing the cream cheese into the turkey straight off the hot skillet. It turned soupy and slid right out of the peppers. Now I always let the turkey cool for five minutes first, and the filling holds its shape perfectly.

The mini size also means my pickier kids will actually eat them. Something about a two-bite pepper feels less intimidating than a full stuffed bell pepper, and they can dip in sour cream or skip it entirely. Leftovers reheat in the air fryer at 350 degrees F for about four minutes and taste just as good the next day at lunch.

Why you will love this

  • Ready in under 30 minutes with only one skillet and the air fryer basket to wash
  • Naturally lower in carbs without any special substitutions or swaps
  • The cream cheese and cheddar filling stays creamy inside but gets lightly golden on top
  • Mini size makes portioning easy for kids and adults eating different amounts
  • Leftovers hold up well in the fridge for three days and reheat quickly

Tips for success

  • Let the cooked turkey cool for at least five minutes before adding the cream cheese. Hot meat makes the filling too loose and it will spill out of the peppers during cooking.
  • Press the filling firmly into each pepper half and mound it slightly above the rim. A light scoop that sits loosely will slide around in the air fryer basket.
  • Cook in a single layer with space between each pepper so the air circulates. Crowding the basket steams the peppers instead of giving you that soft-but-slightly-blistered skin.
  • Drain any liquid from the skillet before pulling the turkey off the heat. If there is standing moisture in the pan, the filling will be watery no matter how long you cool it.

What to serve with these

  • A simple green salad or sliced cucumbers balance the richness of the filling without adding much work.
  • Cilantro lime rice or plain white rice turns this into a more filling plate for bigger appetites.
  • Sour cream or plain Greek yogurt on the side for dipping is worth setting out even if you think your family won’t use it.
  • These also work as an appetizer for a casual get-together. Keep them warm in the air fryer on the lowest setting for up to 10 minutes.

Substitutions

Ground chicken or 90 percent lean ground beef both work in place of turkey without adjusting the cook time. Neufchatel cheese is a reasonable swap for cream cheese and has a similar texture once mixed. Colby Jack or pepper jack can replace the sharp cheddar if that’s what you have open. For kids who won’t touch anything spicy, just leave out the hot sauce entirely. The cumin and garlic powder carry enough flavor on their own.

If you can’t find mini sweet peppers at your store, look for them near the snack peppers in the produce section. Small jalapeños with the seeds fully removed will work for adults who want heat throughout, not just in the filling. Standard bell peppers cut into quarters are a workable backup, though the edges may get softer faster since the walls are thinner once quartered.

Make-ahead and storage

You can cook and season the ground turkey up to two days ahead and keep it covered in the refrigerator. When you’re ready to cook, let it sit at room temperature for a few minutes, then mix in the softened cream cheese and fill the peppers. Cold turkey straight from the fridge makes the cream cheese harder to incorporate evenly. Filling the peppers more than an hour before cooking is not recommended since the moisture from the peppers can soften the filling and make it harder to keep in place.

Store cooked stuffed peppers in a single layer in an airtight container in the refrigerator for up to three days. Reheat in the air fryer at 350 degrees F for four to five minutes until the filling is hot through the center. I don’t recommend freezing these after cooking since the pepper walls turn soft and watery once thawed. If you want to freeze them, fill the raw peppers, freeze them flat on a baking sheet, then transfer to a bag and cook from frozen at 375 degrees F for 16 to 18 minutes.

Ingredients

  • 1 lb ground turkey 93 percent lean
  • 12 mini sweet peppers halved lengthwise, seeds removed, about 24 halves
  • 4 oz cream cheese softened to room temperature
  • 3/4 cup shredded sharp cheddar cheese divided
  • 3 green onions thinly sliced, white and green parts
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp hot sauce optional, such as Cholula or Tabasco
  • 1 tsp olive oil for the skillet
  • 2 tbsp sour cream or plain Greek yogurt for serving, optional

Equipment

  • air fryer
  • medium skillet
  • cutting board
  • sharp knife
  • mixing bowl
  • small spoon for filling

Method

  1. Heat a medium skillet over medium-high heat and add the olive oil. Add the ground turkey and break it apart with a spatula as it cooks. Season with the garlic powder, cumin, salt, and pepper. Cook for 7 to 8 minutes, stirring occasionally, until the turkey is fully cooked through with no pink remaining and any liquid in the pan has evaporated. Remove from the heat and let it cool for 5 minutes. This cooling step matters, because adding cream cheese to steaming hot meat makes it too loose to hold in the peppers.
  2. Transfer the cooled turkey to a mixing bowl. Add the softened cream cheese, half the shredded cheddar, and the sliced green onions. Stir everything together until the cream cheese is fully combined and the mixture looks uniform. Taste it and add the hot sauce now if your family likes a little heat.
  3. Halve the mini peppers lengthwise and remove the seeds and membranes. Lay them cut side up on your cutting board. They are small, so use a small spoon or your fingers to press the turkey filling into each pepper half, mounding it slightly above the rim. Press it in firmly so it does not fall out in the air fryer.
  4. Sprinkle the remaining shredded cheddar evenly over the tops of the filled pepper halves. Preheat your air fryer to 375 degrees F for 3 minutes. Working in batches if needed, arrange the stuffed peppers in the basket in a single layer so air can circulate around them. Do not stack or overcrowd.
  5. Cook at 375 degrees F for 12 to 14 minutes. The peppers are done when the skins are soft and slightly wrinkled, the filling is heated through, and the cheese on top is melted and lightly golden in spots. A fork should pierce the pepper with very little resistance.
  6. Use tongs or a small spatula to transfer the stuffed peppers to a serving platter. Let them cool for 2 minutes before serving since the filling holds heat. Serve with sour cream or Greek yogurt on the side for dipping if you like.

Notes

If you are cooking these in batches, keep the first batch warm in a 200 degree F oven on a baking sheet while the second batch finishes in the air fryer. Leftover filling also works great the next morning scrambled into eggs.
