Drain a can of tuna and a can of chickpeas, mash the chickpeas lightly with a fork so they stick together, and mix both with Greek yogurt, Dijon, celery, and lemon juice. The yogurt gives you extra protein and keeps it lighter than a full mayo version. Spoon into butter lettuce cups or pack the filling separately and wrap it yourself at lunch. Stores easily for three days.

Why this showed up in the rotation

I started making this on weeks when the lunch meat ran out by Wednesday. I had canned tuna, a can of chickpeas, and Greek yogurt already in the fridge for other things, and it turned into a real lunch instead of just snacking through the afternoon. My husband takes it to work in a container with crackers when he does not want the lettuce, which works just as well.

Why you will love this

  • Comes together in about 10 minutes with pantry staples you probably already have
  • Greek yogurt adds a meaningful protein boost over standard mayo versions
  • The filling packs and travels well without getting soggy if you keep the lettuce separate
  • Works as a low-carb lunch or stuffed into a whole-wheat pita if someone wants more substance
  • Stores for three days, so you can make one batch and have lunch sorted for most of the week

Tips for success

  • Mash the chickpeas only partway. You want some texture left so the filling has body and does not turn into hummus.
  • Drain the tuna thoroughly and press it with a paper towel. Excess liquid makes the yogurt dressing watery by day two.
  • Taste for acid before packing. Lemon juice wakes the whole thing up; start with one tablespoon and add more if the filling tastes flat.
  • If you are prepping ahead, store the filling and the lettuce cups separately. Butter lettuce wilts fast once it has any moisture on it.

If the filling turns out bland or watery

  • Bland filling usually means it needs more lemon juice, a pinch more salt, or a small extra squeeze of Dijon. Add a little at a time and stir before adding more.
  • Watery filling on day two is almost always from underdrained tuna or chickpeas. Pat both dry before mixing next time, or stir in a small spoonful of extra yogurt to pull it back together.

Substitutions

Use canned salmon in place of tuna if that is what you have. Plain full-fat Greek yogurt can swap in for low-fat with no change to texture. Celery can be replaced with finely diced cucumber or bell pepper. For dairy-free, use a plain unsweetened coconut or cashew yogurt. Chickpeas can be swapped for white cannellini beans if needed.

Make-ahead and storage

Mix the filling up to three days ahead and refrigerate. Pack the lettuce cups in a separate bag or container and assemble at lunchtime. Store the filling in an airtight container in the refrigerator for up to three days. Stir before serving since some liquid separates overnight. Butter lettuce cups should be stored dry and separate. This filling does not freeze well because the yogurt breaks when thawed.

Brittany’s note

Chickpea Tuna Salad Lettuce Wraps earns a spot in our weeknight rotation because it’s clear, honest on timing, and works for a house of seven — not a photo-only dinner. Cook’s tip I actually use: Mash the chickpeas only partway. You want some texture left so the filling has body and does not turn into hummus.

Chickpea Tuna Salad Lettuce Wraps

Canned tuna and lightly mashed chickpeas come together with Greek yogurt, Dijon, and lemon for a high-protein lunch filling that takes about 10 minutes to prep. Spoon it into butter lettuce cups or pack it separately and wrap it yourself at lunch.
Prep Time 10 minutes
Total Time 10 minutes
Servings: 4 servings
Course: Lunch
Cuisine: American
Calories: 280

Ingredients

  • 2 cans chunk light tuna in water 5 oz each, drained well and patted dry
  • 1 can chickpeas 15 oz, drained and rinsed
  • 1/3 cup plain Greek yogurt full-fat or low-fat both work
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice freshly squeezed, about 1 lemon
  • 2 stalks celery finely diced
  • 2 tbsp red onion finely minced
  • 1/4 tsp kosher salt plus more to taste
  • 1/4 tsp black pepper
  • 1 head butter lettuce leaves separated and kept whole for cups

Equipment

  • medium mixing bowl
  • fork
  • fine mesh strainer or colander

Method

  1. Drain both cans of tuna into a strainer, then press the tuna with a paper towel to remove as much liquid as possible. Set aside. Drain and rinse the chickpeas and shake off excess water.
  2. Put the chickpeas in your mixing bowl. Use a fork to mash them roughly, pressing about half of them down while leaving the rest mostly whole. You want a chunky texture, not a paste.
  3. Add the drained tuna to the bowl and break it apart with the fork so it combines with the chickpeas.
  4. Add the Greek yogurt, Dijon, lemon juice, diced celery, and minced red onion. Stir everything together until it is evenly mixed.
  5. Season with salt and pepper, then taste. If it still feels flat, add another small squeeze of lemon juice. The filling should taste bright and savory, not bland.
  6. Spoon about 1/3 cup of filling into each butter lettuce cup and serve right away, or pack the filling in a container and the lettuce cups separately for lunch later.

Notes

Keep the filling and lettuce separate until you are ready to eat. The filling keeps in the fridge for up to three days.
