Pumpkin spice Rice Krispie treats are one of those fall things I keep coming back to because they require zero oven space and about 20 minutes of actual standing-at-the-stove time. The rest is just waiting for them to set. Real pumpkin puree goes in with the melted marshmallows, which gives these a softer, slightly denser chew than a standard treat and a warm orange color that looks very fall without any food dye.

The total time on the clock is around 50 minutes, but 30 of those minutes you are just letting the pan sit on the counter. I usually start these while dinner is finishing up, and by the time we are done eating and the dishes are cleared, they are ready to cut. The white chocolate drizzle is optional but takes about three extra minutes and makes them look like you put in more effort than you did.

One thing worth saying up front: use pumpkin puree, not pumpkin pie filling. The cans look almost identical on the shelf and I have grabbed the wrong one before. Pumpkin pie filling is already sweetened and spiced, and it will make these cloyingly sweet and throw off the spice balance.

Tips for success

  • If the cereal did not coat evenly, the marshmallow mixture had already started to set before you finished folding. Next time, have the cereal measured and right next to the pot before you start melting.
  • White chocolate seizing in the microwave means it got too hot. Stir between every 30-second interval and stop heating the moment it looks mostly melted, then stir until the rest smooths out from residual heat.

Substitutions

For a dairy-free version, swap the butter for a plant-based stick butter and use vegan marshmallows. The texture is very close to the original. If you do not have pumpkin pie spice, use 1 teaspoon cinnamon plus a small pinch each of ground nutmeg and ground ginger. That combination is close enough that nobody will notice. Cocoa Krispies work in place of Rice Krispies if you want a chocolate-pumpkin version, though the color will be darker and the pumpkin flavor more subtle.

Ingredients
  

  • 4 tbsp unsalted butter plus extra for your hands
  • 10 oz mini marshmallows one standard bag, about 5 1/2 cups
  • 3 tbsp pumpkin puree not pumpkin pie filling
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 tsp fine salt
  • 6 cups Rice Krispies cereal
  • 1/2 cup white chocolate chips for drizzle, optional

Method
 

  1. Grease a 9×13 inch pan generously with butter or nonstick spray. Line it with parchment if you want to lift the slab out cleanly for cutting. Set it near the stove so you are ready to move fast once the marshmallows are melted.
  2. Melt the butter in a large heavy-bottomed pot over medium-low heat. Once it is melted and foamy, add the marshmallows. Stir constantly with a rubber spatula until they are completely melted and smooth, about 4 to 5 minutes. Keep the heat low so the mixture stays pale and does not scorch.
  3. Remove the pot from the heat. Stir in the pumpkin puree, pumpkin pie spice, vanilla, and salt. Mix until the color is even throughout. The mixture will turn a soft orange-tan. It may look slightly lumpy at first, just keep stirring and it will smooth out.
  4. Add the Rice Krispies all at once and fold them in with the spatula until every piece is coated. Work fairly quickly because the mixture starts to firm up as it cools.
  5. Scrape the mixture into the prepared pan. Butter your hands well and press the mixture into an even layer, getting into the corners. Buttered hands grip and press without sticking, and you get a more even layer than with a spatula. Press firmly but do not compact it so hard that the treats become dense.

  7. If you want the white chocolate drizzle, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Drizzle over the set treats using a spoon or a small zip bag with one corner snipped off. Let it set for 10 minutes before cutting into 16 squares.

Notes

The pumpkin puree keeps these softer and chewier than plain Rice Krispie treats. Store in an airtight container at room temperature for up to 4 days.
