From the roundup: 12 Protein Packed Meal Prep Lunches for the Week
Quinoa cooks in about 15 minutes and gives you a complete protein on its own, which makes it a good base when you want the meal to work without a lot of meat. Toss it with rinsed black beans, corn, diced red onion, and a lime-cumin dressing. Portion into four containers and add sliced avocado right before eating, not during prep, so it does not brown.
Why this is on regular rotation
One of my kids went through a stretch where they would not eat much meat at dinner, and I started making this just to have something in the fridge that covered protein without an argument. It stuck around even after that phase passed because it is genuinely easy and my husband takes it to work more than anyone else in the house.
Why you will love this
- Quinoa is a complete protein, so these bowls carry their weight without needing any meat at all
- The lime-cumin dressing pulls everything together and doubles as a dip if you add tortilla chips on the side
- Prep takes about 25 minutes on a Sunday and you have four lunches ready with zero weekday effort
- The base keeps well for five days, making it one of the more forgiving options in a weekly meal prep rotation
- Flexible enough for different eaters: add a protein to one container, leave another plain, and both work
Tips for success
Meal-prep tip: Toast the dry quinoa in the pot for 2 minutes before adding water. It cuts the slightly bitter edge some people notice.
Picky-eater notes
- If someone in the house does not like red onion, dice it fine and let it sit in the lime juice for 10 minutes before adding it to the bowl. The acid mellows the bite considerably.
- Corn can be left out without adjusting anything else. Diced roasted red pepper or halved cherry tomatoes fill the same role in the bowl.
- Avocado should always go on right before eating, not during prep. A squeeze of lime juice slows browning if someone insists on prepping it ahead.
Substitutions
Canned pinto or kidney beans can replace black beans. Frozen corn thawed under warm water works perfectly. White or red quinoa taste the same here, so use what you have. For a vegan dressing, maple syrup can replace honey at the same amount. Brown rice is a reasonable substitute if quinoa is not in the pantry, though it adds more cook time.
Make-ahead and storage
The quinoa can be cooked two days ahead and refrigerated uncovered for an hour before storing so excess moisture escapes. The dressing keeps in a sealed jar for one week. Store the base without avocado in airtight containers for up to five days in the fridge. The dressing can be kept separately and added at lunch if you prefer maximum freshness. These bowls do not freeze well. Add avocado only when you are ready to eat.
Brittany’s note
Quinoa Black Bean Power Bowls earns a spot in our weeknight rotation because it’s clear, honest on timing, and works for a house of seven — not a photo-only dinner. Cook’s tip I actually use: Toast the dry quinoa in the pot for 2 minutes before adding water. It cuts the slightly bitter edge some people notice.

Quinoa Black Bean Power Bowls
Ingredients
Equipment
Method
- Heat a medium saucepan over medium heat. Add the rinsed, drained quinoa to the dry pot and stir constantly for 2 minutes. It will start to smell faintly nutty and a few grains will pop. That is exactly what you want.
- Add the water and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it steam, covered, for 5 more minutes. Uncover and fluff with a fork. Spread it on a sheet pan or leave the lid off for 10 minutes to let steam escape before you pack it.
- While the quinoa cooks, make the dressing. Add olive oil, lime juice, cumin, garlic powder, salt, pepper, and honey to a small jar. Seal the lid and shake for 20 seconds. Taste and add more lime or salt if needed.
- If using red onion raw, dice it fine and put it in a small bowl with a splash of the lime dressing. Let it sit for 10 minutes while the quinoa finishes. This softens the bite without cooking it.
- Once the quinoa has cooled for 10 minutes, divide it evenly among four containers. Top each with a quarter of the black beans, a quarter of the corn, and a quarter of the red onion.
- Drizzle each container with the dressing, using about 1 1/2 tablespoons per bowl. Seal and refrigerate. At lunchtime, slice fresh avocado and lay it on top. Do not pack the avocado ahead.
