From the roundup: 12 Protein Packed Meal Prep Lunches for the Week
Whisk eight eggs with a splash of milk, diced cooked turkey, bell pepper, spinach, and shredded cheese, then pour into a greased 12-cup muffin tin and bake at 350 degrees F for 18 to 20 minutes. Two or three muffins make a solid protein-forward lunch alongside a small salad or fruit. They reheat in the microwave in 45 seconds. Make a batch on Sunday and they cover the full week for two people.
Where these came from
I started making these after ending up with a lot of leftover Thanksgiving turkey that nobody wanted as a sandwich. Chopping it fine and folding it into eggs turned out to be the best use I found. Now I make them most Sundays with whatever cooked protein is already in the fridge, turkey, chicken, or occasionally leftover taco meat.

Mix-in ideas beyond the base recipe
- Leftover taco meat, diced ham, or crumbled cooked sausage all work in place of or alongside the turkey.
- Swap spinach for finely chopped broccoli or sun-dried tomatoes. Just make sure any add-ins are dry before they go into the batter.
- Any melting cheese works here: cheddar, pepper jack, feta crumbled in smaller amounts, or a blend.
- A pinch of garlic powder or smoked paprika whisked into the egg base adds flavor without changing the texture.
Substitutions
Any cooked protein works in place of turkey: shredded rotisserie chicken, diced ham, or crumbled cooked sausage. Leave out the meat entirely for a vegetarian version and add extra vegetables or black beans. Dairy-free: use unsweetened almond milk in place of regular milk and a dairy-free shredded cheese or skip the cheese. Whole eggs can be partially swapped for egg whites if you prefer a lighter texture.
Make-ahead and storage
Bake a full tin on Sunday and refrigerate the whole batch. They are ready to grab and reheat every day without any additional prep. Store cooled muffins in an airtight container in the refrigerator for up to five days. Reheat two or three at a time in the microwave for 40 to 50 seconds. They can also be frozen in a single layer, then transferred to a zip bag. Freeze for up to two months. Reheat from frozen for 90 seconds to two minutes in the microwave.

Turkey and Vegetable Egg Muffins

- Preheat your oven to 350 degrees F. Grease every cup of a standard 12-cup muffin tin thoroughly, including up the sides. Use cooking spray or brush with a little olive oil. Do not skip the sides.
- Heat a small skillet over medium heat. Add the diced bell pepper and cook for 2 to 3 minutes until slightly softened. This drives out extra moisture so the muffin bottoms do not get soggy. Remove from heat and let cool for a minute.
- In a large mixing bowl, whisk the eggs, milk, garlic powder, salt, and pepper together until fully combined and slightly frothy.
- Add the diced turkey, cooked bell pepper, chopped spinach, and shredded cheese to the bowl. Stir everything together with a spoon until the mix-ins are evenly distributed.
- Ladle or pour the egg mixture into the prepared muffin cups, filling each to about three-quarters full. The batter makes enough for 10 to 12 muffins depending on how much you packed in.
- Bake for 18 to 20 minutes. The muffins are done when the centers no longer jiggle when you tap the pan and the tops look set but not dried out. Start checking at 18 minutes.
- Let the muffins cool in the pan for 5 minutes before running a butter knife around each cup and lifting them out. If they stick, let them sit another two minutes. They release more cleanly once they have cooled slightly.
