This whipped feta and roasted cherry tomato dip has become my go-to when I need something that looks like I tried harder than I did. The oven does most of the work. You roast the tomatoes for about 25 minutes while the feta whips up in the food processor, and by the time guests walk in, it looks like something from a restaurant spread.

Active time is maybe 10 minutes. The rest is just waiting on the oven and scraping down the food processor once or twice. I like to start the tomatoes first, then blend the feta base while they roast so everything finishes around the same time.

Cold feta straight from the fridge actually blends smoother than room-temperature feta here, which is the opposite of what you might expect. Keep that in mind before you start.

Why you will love this

  • The whole thing comes together in 35 minutes with mostly hands-off oven time
  • You can whip the feta base up to 2 days ahead, which takes real pressure off party day
  • Roasted tomatoes get jammy and sweet in a way that plain cherry tomatoes never are
  • Works with whatever you have for dipping: pita, crackers, crusty bread, even sliced cucumbers
  • The garlic roasts right alongside the tomatoes, so there is no separate step and no raw garlic bite

Tips for success

  • Use cold feta straight from the fridge, not room temperature. Cold feta breaks down more smoothly in the food processor and gives you a creamier result.
  • If the whipped feta still looks grainy after a full minute of blending, drizzle in a little more olive oil with the machine running and blend another 30 seconds. That usually fixes it.
  • Give the tomatoes room on the baking sheet. If they are crowded, they steam instead of blister and you lose that caramelized edge flavor.
  • Spoon all the pan juices over the feta when you serve it. That liquid is where a lot of the flavor lives and it soaks into the dip as people scoop.

Common questions

  • Can I use crumbled feta instead of block feta? Block feta has less moisture and whips much smoother. Pre-crumbled feta often turns grainy and never fully smooths out.
  • Can this be served cold? Yes, though the texture is creamiest at room temperature. Pull it from the fridge about 20 minutes before serving.
  • What if my tomatoes are not bursting at 22 minutes? Give them the full 25 and check again. Larger cherry tomatoes sometimes need a minute or two more.
  • Can I skip the cream cheese? You can, but the dip will be sharper and thinner. Greek yogurt is the better swap if you want to leave it out.

Substitutions

If you want a lighter base, swap the cream cheese for an equal amount of full-fat Greek yogurt. The dip will be a little tangier and slightly looser, but it still works well. Ricotta is another option, though it makes the texture softer and less spreadable. For a dairy-free version, a good-quality vegan block feta and vegan cream cheese both blend fine here.

No fresh cherry tomatoes on hand? Canned whole San Marzano tomatoes, drained and halved, roast up well on the same timeline. Skip the red pepper flakes if you are serving kids or anyone who does not love heat, the dip is plenty flavorful without them.

Make-ahead and storage

The whipped feta base can be made up to 2 days ahead. Press plastic wrap directly against the surface and refrigerate. The roasted tomatoes can be made a day ahead and stored separately in the fridge. When you are ready to serve, warm the tomatoes gently in a small skillet over low heat for a few minutes, then spoon them over the feta base.

Leftover dip keeps in an airtight container in the fridge for up to 3 days. Store the tomatoes and feta base separately if you can, and spoon the tomatoes over just before eating. The feta base is best at room temperature, so let it sit out for 15 to 20 minutes before serving leftovers. I would not freeze this one since the feta base gets grainy and watery once thawed.

Whipped Feta and Roasted Cherry Tomato Dip

Creamy whipped feta blended with cream cheese and olive oil is topped with sweet, bursted roasted cherry tomatoes. Serve warm or at room temperature with bread, pita, or crackers for an easy, impressive party dip.

Ingredients

  • 8 oz block feta cheese cold, broken into chunks
  • 4 oz cream cheese softened to room temperature
  • 3 tbsp extra-virgin olive oil divided, plus more for drizzling
  • 1 lb cherry tomatoes mixed colors if available
  • 3 cloves garlic peeled and left whole
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional, for a little heat
  • 1/4 tsp black pepper freshly ground
  • 2 tbsp fresh basil leaves torn, for garnish
  • 1 loaf crusty bread or pita wedges for serving

Equipment

  • food processor or blender
  • rimmed baking sheet
  • rubber spatula
  • serving bowl

Method

  1. Preheat your oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  2. Spread the cherry tomatoes and whole garlic cloves on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil, sprinkle with dried oregano and black pepper, and toss to coat. Arrange in a single layer so the tomatoes have room to blister.
  3. Roast for 22 to 25 minutes, until the tomatoes are wrinkled, bursting, and starting to caramelize at the edges. The garlic should be golden and soft. Pull them from the oven and set aside.
  4. While the tomatoes roast, add the cold feta chunks and softened cream cheese to a food processor. Process for about 1 minute until the mixture starts to look crumbly and combined. With the machine running, drizzle in the remaining 1 tablespoon of olive oil. Scrape down the sides and process another 30 to 60 seconds until the dip is completely smooth and creamy. If it looks grainy, drizzle in a little more olive oil and blend again.
  5. Spread the whipped feta in an even layer on a large plate or in a shallow serving bowl, using the back of a spoon to create a slight well in the center.
  6. Squeeze the roasted garlic cloves out of their skins and scatter them over the feta. Spoon all the roasted tomatoes and any juices from the pan directly over the top.
  7. Scatter torn fresh basil over everything and finish with a light drizzle of olive oil and red pepper flakes if using. Serve warm or at room temperature with bread, pita, or crackers.

Notes

The whipped feta base can be made up to 2 days ahead and kept covered in the fridge. Bring it to room temperature for about 20 minutes before serving so it spreads easily. Roasted tomatoes can be made a day ahead and warmed gently before spooning over the dip.
