This whipped feta and roasted cherry tomato dip has become my go-to when I need something that looks like I tried harder than I did. The oven does most of the work. - Roast for 22 to 25 minutes, until the tomatoes are wrinkled, bursting, and starting to caramelize at the edges. The garlic should be golden and soft. Pull them from the oven and set aside.
- While the tomatoes roast, add the cold feta chunks and softened cream cheese to a food processor. Process for about 1 minute until the mixture starts to look crumbly and combined.
