Method
- Preheat your oven to 400 degrees F. Line a large rimmed sheet pan with foil or parchment paper for easy cleanup.
- Pat the salmon fillets completely dry with paper towels on all sides. This is the most important step for getting a good glaze. If the fish is wet, the coating will slide right off and the fish will steam instead of roast.
- In a small bowl, whisk together the Dijon mustard, honey, 1 tablespoon of olive oil, garlic powder, lemon zest if using, and a pinch of salt and pepper. Set the glaze aside.
- Toss the trimmed green beans with 1 tablespoon of olive oil, onion powder, and the remaining salt and pepper. Spread them in an even layer on one side of the sheet pan. Roast for 5 minutes while you finish prepping the salmon.
- Pull the pan out of the oven. Push the green beans to the edges and set the salmon fillets in the center with space between each one. Brush a generous coat of the honey mustard glaze over the top and sides of each fillet.
- Return the pan to the oven and bake for 12 to 14 minutes, depending on the thickness of your fillets. The salmon is done when it flakes easily at the thickest part when you press it gently with a fork and the glaze is golden and set on top.
- Serve immediately with lemon wedges on the side. The green beans should be tender with a little bite to them and lightly browned at the tips.
Notes
For thicker fillets over 1 inch, add 2 to 3 extra minutes of cook time. If you prefer well-done salmon with no pink in the center, aim for an internal temperature of 145 degrees F.
