- If you are using canned pineapple, drain it through a fine mesh strainer and press down gently with a spoon to squeeze out as much liquid as possible. Watery pineapple will make the cottage cheese soupy within a few minutes, so this step matters.
- Spoon 1/2 cup of cottage cheese into each small bowl or snack container. Spread it out slightly so there is room for the toppings.
- Spoon about 1/4 cup of the drained pineapple over the cottage cheese in each bowl. If using fresh pineapple, cut it into small chunks so it is easy to eat with a spoon.
- Drizzle about 1 and 1/2 teaspoons of honey over each serving. Adjust to your kids' taste. If you are skipping the honey, add a small pinch of cinnamon instead for flavor.
- Add a tiny pinch of salt if you like. It sounds odd over fruit but it actually makes the pineapple taste brighter and the cottage cheese taste less bland. Serve immediately or cover and refrigerate until ready to eat.
Notes
For lunchbox packing, store the cottage cheese and pineapple in separate containers and combine at school. This keeps the texture right even after a few hours in a bag.
