Crockpot Chicken and Edamame Stew

Chicken breasts simmer in a ginger and soy-seasoned broth with mushrooms and edamame for a light but protein-packed slow cooker stew. The chicken shreds right into the broth and the edamame adds a satisfying bite that keeps you full.

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts left whole
  • 2 cups frozen shelled edamame added in the last 45 minutes
  • 8 oz cremini mushrooms sliced
  • 1 medium yellow onion thinly sliced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger peeled and grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil toasted
  • 1 tbsp rice vinegar
  • 4 cups chicken broth low-sodium
  • 1 tsp kosher salt adjust to taste after cooking
  • 1/4 tsp black pepper
  • 2 stalks green onions thinly sliced, for serving
  • 1 tsp sesame seeds for serving, optional
  • 2 cups cooked white rice or rice noodles for serving, optional

Method
 

  1. Place the sliced onion, mushrooms, minced garlic, and grated ginger in the bottom of the slow cooker. Spread them into a relatively even layer so the chicken sits on top rather than sinking into the liquid.
  2. Lay the whole chicken breasts on top of the vegetables. Pour the chicken broth over everything, then drizzle in the soy sauce, sesame oil, and rice vinegar. Season with the salt and black pepper.
  3. Place the lid on the slow cooker and cook on low for 5 to 6 hours. The chicken is done when it registers 165 degrees F on an instant-read thermometer and pulls apart very easily when pressed with a spoon.
  4. About 45 minutes before the cook time is up, add the frozen edamame directly to the slow cooker and stir it into the broth. Replace the lid and let it cook through for that remaining time. Adding it late keeps the edamame firm and bright rather than soft and grainy.
  5. Remove the chicken breasts and shred them using two forks, pulling the meat apart into pieces that are small enough to fit comfortably on a spoon. Return the shredded chicken to the slow cooker and stir to combine with the broth and vegetables.
  6. Taste the broth and adjust salt or soy sauce if needed. The broth should taste savory, gingery, and slightly nutty from the sesame oil.
  7. Ladle the stew into bowls over rice or rice noodles if you like, or serve it on its own. Top each bowl with sliced green onions and a light sprinkle of sesame seeds before serving.

Notes

The edamame timing is the most important detail in this recipe. Adding it in the last 45 minutes keeps the texture firm and pleasant. If you add it at the start, it turns soft and loses that satisfying bite.
