Pumpkin Custard Pie with Spiced Whipped Cream

Ingredients
  

  • 1 refrigerated or homemade single pie crust (9-inch) fitted into a 9-inch pie dish, crimped
  • 15 oz canned pumpkin puree not pumpkin pie filling
  • 12 oz evaporated milk one standard can
  • 2 large eggs room temperature
  • 3/4 cup granulated sugar
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp fine salt
  • 1 cup heavy whipping cream cold, for topping
  • 2 tbsp powdered sugar for whipped cream
  • 1/4 tsp ground cinnamon for whipped cream
  • 1 pinch ground nutmeg for whipped cream

Method
 

  1. Blind-bake the crust first. Preheat the oven to 375 degrees Fahrenheit. Line the fitted, crimped crust with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes, then carefully lift out the weights and parchment. Prick the bottom a few times with a fork and bake for another 5 minutes until the bottom looks dry and barely golden. Remove from the oven and let it cool for 10 minutes. Lower the oven temperature to 325 degrees Fahrenheit.
  2. Make the filling while the crust cools. In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, cinnamon, ginger, cloves, nutmeg, and salt. Whisk until everything is fully combined and smooth, about 1 minute. Taste the batter and add a pinch more salt if the spices smell stronger than the pumpkin.
  3. Pour the filling into the cooled crust and place the pie dish on a rimmed baking sheet for easy handling. Slide it into the 325 degree Fahrenheit oven and bake for 50 to 60 minutes. Start checking at 50 minutes. The edges will look set and slightly puffed, but a 1-inch circle right in the center should still wobble slightly when you nudge the pan. That jiggle means it is done. If the whole surface shakes like liquid, give it 5 more minutes.
  4. Remove the pie from the oven and set it on a wire rack. Do not touch or move it for at least 2 hours. The residual heat will finish setting the center completely. Once it is fully at room temperature, refrigerate it uncovered. This keeps the crust from steaming and going soft overnight.
  5. Before serving, make the spiced whipped cream. Pour the cold heavy cream into a large bowl. Beat with a hand mixer or stand mixer on medium-high until it starts to thicken, then add the powdered sugar, cinnamon, and nutmeg. Continue beating until soft, billowy peaks form when you lift the beaters. Do not overbeat or it will turn grainy.
  6. Slice the cold pie into 8 wedges and serve each piece with a generous spoonful of spiced whipped cream on top. The pie slices cleanest when fully cold, so pull it from the refrigerator right before you cut it.

Notes

The pie can be baked up to 2 days ahead and kept refrigerated uncovered. Make the whipped cream the same day you serve it for the best texture.
