- Preheat your oven to 325 degrees F. Line a baking sheet with parchment paper and set it aside.
- In a large mixing bowl, beat the softened butter and brown sugar together with a hand mixer or stand mixer on medium speed for two to three minutes. The mixture should look fluffy and a shade lighter than when you started. Scrape down the sides of the bowl once during mixing.
- Add the vanilla extract, cinnamon, ginger, cardamom, and salt. Mix on low for 20 seconds just to combine. Add the flour all at once and mix on low speed until the dough just comes together and no dry streaks of flour remain. Do not over-mix. The dough will look a little crumbly but should hold together when you press a handful between your fingers.
- For a slice-and-bake style: Turn the dough out onto a clean surface and press it together. Shape it into a log about 2 inches in diameter and 9 inches long. Wrap tightly in plastic wrap and refrigerate for 30 minutes to firm up slightly, then slice into rounds about 1/3 inch thick. For a cut-out style: Roll the dough between two sheets of parchment to about 1/4 inch thickness and cut with cookie cutters of your choice.
- Arrange the cut cookies on the lined baking sheet with about one inch of space between them. They will not spread much, but a little room helps them bake evenly.
- Bake at 325 degrees F for 14 to 16 minutes, until the edges are just barely turning golden. The centers will look pale and slightly underdone when you pull them out, which is exactly right. Shortbread firms up as it cools, and overbaking makes it hard rather than sandy.
- Leave the cookies on the baking sheet for 10 full minutes before attempting to move them. They are fragile when warm and will crumble if transferred too soon. Once firm, move carefully to a wire rack to finish cooling completely before storing or stacking.
Notes
Store at room temperature in an airtight tin for up to one week. Dough log can be refrigerated up to three days or frozen up to one month. Slice from cold and add one to two minutes to bake time.
